The sweet potato is lower on the glycemic index than white potatoes. Insulin is not spiked because it’s low on the glycemic index. You can eat sweet potatoes at any time, but they are an acquired taste when eaten plain.
Aaron explains how to prepare a sweet potato in 5 minutes with a paper towel, microwave, and sweet potato. Microwave on high for 5 minutes for small or medium sweet potato. For a large sweet potato, cook in the microwave for 7 minutes. Let it rest when done for up to a half hour. Peel off the skin, pop on plate, salt & pepper it, and add a little meat on top.
